Dad, Papou, Gus, Kosta, Konstantinos were but a few names used to address a man who left his indelible mark on our lives. Dad was a gentle giant of a man with a heart of gold. His ready grin and easy humour put everyone at ease. He loved his family and worked very hard to provide them with the best. Dad immigrated to Canada in 1957 taking the train from Athens, Greece to Paris, France then the USS Olympia Steamliner to Montreal and the train to Edmonton to join his older brother John. Sadly, Uncle John passed away unexpectedly shortly thereafter. Dad worked in Forestry in the Cassiar Mountains where he made many lifelong friends.
When Dad went back to Greece, he met and married our wonderful Mom, Maria, and enjoyed 52 years of marriage. In 1970, he established the Chase Cafe where he spent over 40 years making and serving amazing food to a community he regarded as family. Dad loved spending time with all who came by the restaurant. He quickly became like a local celebrity, greeting friends everywhere he went. Trips to visit family in Greece and a lifelong dream Disney Cruise to Alaska provided many memorable moments.
Though his health challenged him, he was a very strong man who had a deep desire to live to enjoy his children and grandchildren. Kosta, Elliana and Arianna were the light of his retirement years and he took every opportunity to see them grow by attending hockey games and sitting in the car by the park just to watch them play. He left a great legacy of kindness, compassion and generosity that will live on in the hearts of those whose lives he touched. As he watches down on us, he will not only see how much we miss him but also how his love lives on.
We love you Dad...
