

With deep love and profound sadness, we announce the passing of Veronica Rubio on June 17, 2025, at the age of 60. Veronica lived a life marked by unwavering love, resilience, joy, and grace -- a legacy that will continue to live on in the hearts of all who knew and loved her.
Born on March 18, 1965, Veronica was a proud graduate of St. Edward's University, where she earned her Bachelor of Arts degree. She went on to build a distinguished 36-year career at Greater Texas Federal Credit Union, where she served with dedication and pride as Assistant Vice President of Loan Operations. Her strong work ethic, integrity, and warmth left a lasting impression on her colleagues and the many members she served.
Veronica is survived by her beloved wife of 42 years, Jackie Mendez. Together, they built a beautiful life rooted in love, laughter, and countless cherished memories. Lake Buchanan was Veronica's happy place-- a peaceful retreat where she found joy and calm, especially when fishing with Jackie, surrounded by family and friends.
Though always stylish and glamorous-- never without her polished nails, makeup, and perfect hair-- Veronica was equally at home baiting a hook and reeling in a catch with skill and pride. She was known for her kindness, her infectious laugh, and her love of dancing. She had a big, generous heart and a vibrant spirit that lit up every room. A true sports enthusiast, Veronica was especially passionate about football and softball, and will forever be remembered as the Texas Longhorns' biggest fan.
She is survived by her parents, Sabino Rubio II and Ventura Uballe, and her stepmother, Krystin Rubio. She was a devoted sister to Sabino Rubio III, Jennifer Rubio Gredicek, Manuel Rubio, and Darcy Volden. She is also remembered with love by her in-laws: Lisa Rubio, Kathy, Renee, and Monica Mendez; and Raymond Gredicek. Veronica was a proud and beloved aunt to fourteen nieces and nephews; Simon and wife Marki, Lauren, Ethan, Isaiah, Luke, David, Elliot, Emillio, Alex, Eligh, Gabriel, Nicole, Landon, and Tony. her beloved dog and constant companion, Lady Noelle, was always faithfully by her side.
Veronica also leaves behind many aunts, uncles, and cousins who loved her dearly and will forever cherish her memory.
The family would like to extend a heartfelt thank-you to dear friends Julie Welch and Mystel Jensen, whose unwavering support and presence were a true gift in Veronica's life and in her final days.
Veronica's memory is a blessing to all who knew her. As we celebrate her incredible life, we invite everyone to raise a Miller Lite in her honor-- a toast to a life well-lived, full of laughter, love, and unforgettable moments.
The family encourages loved ones to share a favorite memory, enjoy a quiet moment by the lake, or dance like no one's watching -- just as Veronica would have.
A memorial service for Roni will be held Thursday, July 10, 2025 at 12:00 PM at Weed-Corley-Fish South Chapel, 2620 South Congress Avenue, Austin, Texas 78704. Following the memorial service will be a reception following celebration at 3:00 PM at American Legion 83, 4401 E St Elmo Rd, Austin, Texas 78744.
