Lou Ellen Coker Jackson, 80, of Baytown Texas passed away peacefully at her home on September 2, 2016 following a six year battle with cancer. She was preceded in death by her parents, Myrtle and Garland Coker; her husband, Richard Rodney Jackson; and her son, Richard Keith Jackson.
Lou is survived by her sister Jean and brother-in-law Don Ancelet, her sons Larry (and Tammy) Jackson, Randy (and Leslie) Jackson, her daughter Jan (and Wes) Westbrook, and her daughter-in-law Christen Jackson. Lou and Rodney were also blessed with 17 grandchildren, 12 great-grandchildren, and numerous friends.
Lou spent her childhood playing with her four siblings in the woods of East Texas on the outskirts of Livingston. Lou would talk fondly of her time in Cokerville, remembering how she helped with the cows on the dairy farm and riding the cows as they ran down the chute.
Lou and Rodney were married for 55 years. They enjoyed traveling together and especially loved their missionary trip to China. Lou met many Christians on their China trip, and was highly encouraged by their love for the Bible, especially the Bibles that Lou and Rodney smuggled in, disguised as birthday presents.
Lou worked with the Spirit Ships for 10 years, and then continued to support this mission for many years after. The Jackson home was open to many of these missionaries and she and Rodney served as parental roles in two weddings for some of these "adopted children". Her love for these missionaries and their work gave Lou much comfort and joy.
The biggest joy in Lou's life came from her 17 beautiful grandchildren and 12 great-grandchildren. Christmas was her favorite holiday because her home was filled with family and friends.
Lou was a life-long Christian who truly lived out her faith. She was an inspiration to countless others. Her courageous fight at the end of her life was not because she feared death, but because she knew she was not yet finished serving the Lord.
"I would have lost heart unless I believed that I would see the goodness of the Lord in the land of the living. I will be of good courage and He will strengthen my heart."
