

A century and one year old, Mercedes was born on September 21, 1912 at San Fernando Pampanga. She was preceded in death by her husband Ramon Limjoco, sister Virginia, brothers Martin and Rufo Cuizon, children Antonio, Leonardo, and Carlito Limjoco, and daughter Erlinda Lalican.
Surviving family includes son-in-law Reuben and daughter Lolita Mangindin residents of Colorado Springs since 1968. Son Wilfredo Limjoco and daughter Loreta Ancheta and families in the Philippines and in the United States, grandchildren Dolora Henderson and husband Theodore Henderson, Alexander Mangindin and Kimberly, and Caroline Schulz and husband Peter Schulz. A grand total of 30 grandchildren and 10 great- grandchildren.
Mercedes was a “survivor” because when her husband died in an accident in 1957, she became the father / mother of 7 children which was a difficult role for a woman at age 46. Due to this tragedy, she learned to be a “Jill of all traits”… from parenting, marketing, selling, buying, and trading in an open market. She even ventured physical therapy massaging for healing etc., and the most exciting for her was her palmistry that she learned from an Indian (Hindu) guru and card reading / fortune – telling.
Her greatest passion was cooking. She was a gifted master chef at her own time. She catered meals for employees at government offices. This led to venturing her own restaurant and managing her own ten apartment complexes in the city of Manila.
Over the years she lived independently on community apartments enjoying cooking for friends who visited regularly because of her cuisinart talent. Her generosity and hospitality became her trademark for entertaining.
She has been a resident of Colorado Springs since 1984 and became a naturalized citizen 5 years thereafter. Mercedes Limjoco will always be remembered as a friend, a confidant, a cook, a teacher, and a disciplinarian, but above all, a loving, caring, generous person.
A Visitation will be from 5:00-700pm Thursday, January 9 at St. Dominic’s Catholic Church with a Rosary at 7:00pm. Mass of the Christian Burial will be on Friday, January 10 at 10:00am at the church with a reception to follow. Burial will be at Memorial Gardens Cemetery.
