Rosita was born on September 22, 1947 in Frankenberg, Germany to James O. Henson and Anna Elizabeth Wolf. She came to America in 1980 and started her own business in Copperas Cove, European Hair Designs, where she worked for the next 20 years. In 1997, at the age of 50, Rosita earned an Associate Degree in Substance Abuse Counseling from Central Texas College. Upon achieving this great accomplishment, she went on to work for the Texas Department of Criminal Justice for five years as a substance abuse counselor. From there, she worked for the University of Texas Medical Branch until her retirement ten years later. Upon retirement, Rosita filled her days with the things she loved most: gardening and yard work, home interior projects, knitting, crocheting, painting, baking, cooking, and spending time with her family and friends. She also enjoyed traveling home to Germany and vacationing in Corpus Christi.
Rosita is survived by her daughter Yvonne Höffchen, wife Michelle Höffchen, and their children Cecilia and William; granddaughter Courtney Rosita Höffchen, partner Michael Galer, and their children Taylor Lee and baby Galer; grandson Desland Wallace; former husband and best friend James Ronald Coffey; sons by love, Randy Stoneroad and Larry Mione, who tirelessly and selflessly loved and cared for her; dear friend, advocate, and caregiver Jean Bellinger; and many close friends that she considered family.
She is preceded in death by her daughter Nora Höffchen, her mother Anna, and her father James.
Rosita was so spunky and full of sass. She loved helping others in their times of need, and she welcomed everyone she met into her family with open arms.
The family would like to extend their deepest gratitude to the Palliative Care team at Baylor Scott and White in Temple. From the moment Rosita transitioned into her final stages of care, compassion and comfort were their sole priority. They extended love and kindness to Rosita and her family during every moment they were there, and her loved ones will be forever grateful to Dr. Garza, Dr. Robinson, Lindsey, Logan, Carmen, and the rest of the fourth-floor team.
Family and friends will be celebrating the life of Rosita Coffey at her home on Sunday, June 2, 2019 at 10:00 in the morning. We will be honoring her memory with German baked goods, coffee, and music that she enjoyed. Please let Yvonne or Michelle Höffchen know if you will be able to join us for this celebration of life.
