Carol was born on July 24, 1947, to Hilda and Manuel Mattos of Easton, California. She was the oldest of five children and grew up on the family farm, where her father ran a dairy and farmed cotton.
In 1964, Carol was honored as the 37th CPDES Easton Festa Queen. She attended Washington Union High School and graduated with the Class of 1965. After high school, she began her professional career at Bank of America in Calwa, California.
In 1970, Carol met the love of her life, Rod Olsen. The two were married on October 2, 1971, and together they built a beautiful life, raising two sons, Rodney, and Brenden.
In 2003, Carol’s greatest wish came true when she became a grandmother. She immediately retired after 36 years of dedicated service in the banking industry to devote her time to her family. Her grandchildren became the center of her world, and she took immense pride in supporting their many activities. Whether attending performances, award ceremonies, practices, or games, she was their biggest cheerleader—always arriving with their favorite snacks and plenty to share.
Carol had a passion for crocheting, creating countless blankets that she lovingly donated to newborns in hospitals and individuals in care homes. She also enjoyed completing crossword puzzles, assembling jigsaw puzzles, and watching sports. While she and Rod traveled throughout the country, her favorite destination remained Pismo Beach, where she spent summers with her family from childhood onward.
Known for her wonderful sense of humor and kind-hearted nature, Carol had a bright, animated personality that brought joy to all who knew her. She will be deeply missed by her family, friends, and all who had the pleasure of knowing her.
Carol was preceded in death by her parents, Manuel and Hilda Mattos; brother, Jimmy Mattos; sister, Mary Martin; mother-in-law, Elenor Olsen; father-in-law, Fred Olsen; sister-in-law, Charlotte Harris; brother-in-law, Ken Harris; sister-in-law, Maydella Jarvis; and brother-in-law, Ron Jarvis.
She is survived by her loving husband of 53 years, Rod Olsen; son, Rodney Olsen, and his wife, Marie; son, Brenden Olsen, and his wife, Cynthia; and her beloved grandchildren, Bo, Jayden, and Lily Olsen. She is also survived by her brother, Manuel (Sonny) Mattos, and his wife, Celeste; sister, Maureen Margarian, and her husband, Henry; sister-in-law, Leslie Mattos; sister-in-law, Cindy Banks; sister-in-law, Sue Olsen; brother-in-law, Fred Olsen, and his wife, Margaret; nieces and nephews: Mckenna Mattos, Jared Mattos, Denise and Jason Roberts, Amy and Hal Lore, David and Jodi Martin, Brian and Bianca Mattos, Matt and Astrid Margarian, and Jeffrey and Randi Margarian, John Harris, Mary Ellen , Elizabeth, Travis Hussey, Curtis Olsen, as well as numerous nieces, nephews, great-nieces, and great-nephews.
Carol’s presence will forever be cherished by those who loved her.
