Ellen was born in Taiwan in 1944 to Ah-Boong Kuo and May Yuan Kuo. She attended National Keelung Girls’ Senior High School and graduated in 1963 from Ming Chuan University with a degree in Business Administration. In 1969 she married Henry T. Chang, and in 1975 she immigrated to the United States where Henry was completing his medical training in Chicago, Illinois. In 1977 they moved, together with their family, to Fond du Lac, Wisconsin, where she spent the rest of her life.
Ellen was a full-time mother who put her energy and love towards raising her children and focusing on their health and education so that Henry could concentrate on his medical practice. She taught herself to cook and became famous for her egg rolls, cong you bing, dumplings, steamed buns, and beef noodle soup. She loved visits and video calls with her five grandchildren. She was a gentle, thoughtful, generous, and loving person.
Ellen was preceded in death by her brother Song Kuo. She is survived by her husband Henry, son Andy Chang (Tam Pham), her daughters Angela Chang (Christopher Sokolowski) and Cindy Chang (Jordan Macknick), and her grandchildren: Nina, Ethan, Elsa, Zachary, and Evelyn, sister Jeannie Kierce, and brothers John Kuo, Dong Kuo, Ko Kuo, and Fu Kuo.
