Esther was born to John and Romula Diaz on March 18, 1934 in Sugar Land, Texas. Growing up, she excelled at everything she put her mind to. She graduated with honors from Jefferson Davis High School, earned high grades from Massey Business College, owned her own donut shop, and even went back to school late in life to get a degree in education from Houston Baptist University. She dedicated many years of her life to teaching bilingual students and made a meaningful and lasting impact on her students and fellow teachers’ lives.
Esther was also known for her strong commitment to family and unwavering faith in the Lord. She was a long-time member of First Baptist church and lived exemplifying the kindness and love of Jesus.
Though we mourn the passing of her earthly body, Esther is reunited with several family members in heaven, including her sister, Rebecca Castillo, son, Adrian Lopez, daughter, Margo McCutchen, and granddaughter Angela McCutchen.
She is survived by her sister, Lydia Cordova, brother, Samuel (Mary) Diaz, grandchildren, Sandra Cmeyla, Adrian (Leah) Lopez III, Christina Lopez, Samantha (Richard) Lopez, Rachel McCutchen, 9 great-grandchildren, 4 great-great grandchildren, and many loving family members and friends.
