

Beth became deeply loved within the downtown community through her many years at the Idle Hour Pub, where she faithfully served her favorite customers for more than 20 years. Her friendly presence, familiar smile, and genuine care for others made her a cherished part of daily life for so many.
Beyond the Idle Hour, Beth formed lasting friendships throughout downtown LaGrange during her time at Kitty’s Haircare and Corley Drugs. Whether she was working, visiting, or simply stopping to chat, Beth had a way of turning everyday encounters into meaningful connections. She knew people by name, remembered their stories, and made everyone feel seen and valued. These relationships were a special part of her life and a testament to the warmth she carried wherever she went.
Beth was a devoted and loving woman whose greatest joy in life was her family—especially her cherished grandchildren. She treasured her daughters deeply and made family a priority, often hosting Sunday dinners that brought everyone together. She loved listening on the radio to her favorite Cavalier Blake as he played Friday night Callaway football games, always “getting the tea” and staying connected to what was going on around her.
Many of her happiest moments were spent sitting on the back porch, tending to her yard, or relaxing while watching her favorite shows, The Young and the Restless and The Price Is Right. Beth enjoyed her spontaneous adventures with Chuck and Crystal and found comfort and joy in listening to Chuck’s music. Her favorite color was blue—a simple reflection of her calm, steady spirit.
Beth is survived by her daughters, Reagan (Chris) Morris and Christy Harrington; her son, Chuck Knight (Crystal); her grandchildren, Hunter (Taylor) Harrington, Kyleigh Morris (Shane), Bailey Morris, Taylor Harrington, Sydney Knight and Blake Harrington; and her great-grandchildren, Emmaleigh Knight, Jaxon Griffin, Archer Harrington, Riley Fields, and Emre Harrington. She is also survived by her sister, Tommie Janice Gay.
She was preceded in death by her beloved husband, Lester Knight, and her loyal companion, her dog Roxie—affectionately known as “Foxie Roxie”—with whom she is now reunited.
Beth will be remembered for her warmth, her love of family, her simple joys, and the lasting impact she had on everyone who knew and loved her.
A gathering of family and friends will be held on Friday, February 6, from 6:00 to 8:00 p.m. A Celebration of Life will follow on Saturday at 2:00 p.m. Both services will be held in the Chapel of Striffler-Hamby Mortuary in LaGrange.
