Jay Adrian Baxter, 56, passed away on March 5, 2024, in his happy place, Puerto Vallarta, Mexico. He was born in Little Rock, Arkansas, on March 11, 1967. After graduating from McClellan High School, he attended Memphis School of Art before moving to Los Angeles to discover himself working as an extra in several blockbuster hits. When returning to Arkansas, he fell in love with cooking and worked for some of the most talented chefs there. He opened and sold three successful restaurants, making many friends. Before retiring, he served as Executive Chef at the Arkansas Governor’s Mansion for Governor Mike Beebe and his wife, Ginger Beebe, during his 2nd term. Jay was so loved and brought much joy to everyone around him, and his antics still bring smiles and laughter to his family, friends, and acquaintances. He was one of the kindest souls placed here on Earth. Jay is deeply missed, and his absence leaves a void that can never be filled. He is survived by his mother, Willa Baxter, siblings, Tommy and Kim, and husband of 34 years, David Spencer. His brothers, Andy and Nick, and father, Billy Baxter, preceded him in death. Jay will forever live in our hearts and rest at Pierce Brothers Westwood Village Memorial Park.
