

On June 14, 2025, the stars shined brighter as our beautiful mom entered the heavens and gained her angel wings. A true Viking, she left the mortal world with a fighter’s spirit and held on as long as her physical body could.
Elisabeth Von Wind Rummelhoff was born on October 11, 1928, in Jeloy, Moss Norway. The youngest daughter of Fredrik Wilhelm and Aslaugh Rummelhoff. She grew up with 5 siblings who taught her to be tough and shrug off adversity, while still managing to act like a lady. She was blessed with many talents, but grew to especially love the piano, drawing and painting.
Although she excelled in all her studies, the Arts are where she was destined. A gifted pianist and artist, she spent her educational years mastering both. Mom was a true patron of the arts. She was a season ticket holder of the Utah Symphony for most of her adult life and participated as a member of the Utah Symphony Guild. She was also a contributor of Artworks for Kids. She believed that all schools should have programs specifically dedicated to the arts. She was a prolific writer, dedicated to writing in her journal every day and expressing herself through her poetry.
Mom always stayed true to her Norwegian heritage. She was so proud of her roots and would tell anyone she met about her childhood in Norway, and why it was the best place to grow up. As we grew, summer vacations consisted of bi-annual trips to her childhood home, Kveldsro, where we got a chance to know our extended family. She wanted us to appreciate the Scandinavian culture and gain a deeper understanding of who she inherently was.
One to never shy away from adventure, she took a leap of faith and went to art school in Paris and then moved to the United States, first New York and eventually Utah. She worked as an art designer for ZCMI in their advertising department illustrating all of their fashion ads. While in Utah she met George Laughlin, married and they settled in the Millcreek area. They had 3 children together and family became her number one priority. She always insisted that her children, and grandchildren were her greatest accomplishment. She was a mentor, coach and everyone’s greatest supporter. Although she and George divorced, they remained close and were still very much involved in each other’s lives right up until George’s passing.
In the end she taught us that the simple things in life are best: a little sunshine, a seat by the fire, having your family close and a piece of chocolate is all you need to be happy.
Elisabeth is preceded in death by her partner George Laughlin, her parents, siblings and many furry friends. Survived by her three children Wendy (Ty), Bret (Linda) and Mina
(Casey), her grandchildren Jamon, Nick, Oliver and George, her sister-in-law Lajla and much extended family still living in Norway.
Private graveside services will be held for family. A celebration of life will be held at the residence of her son Bret Laughlin on Saturday June 21st at 6PM where friends can meet and celebrate a life lived to the fullest.
