

Eliza Yu-Ping Lau Poon, a beloved, gentle, and hard-working soul, passed away on November 3, 2025, at the age of 79. Born on September 14, 1946, in Kowloon, Hong Kong, to Chan Yee Lan and Lau Yan Man, Eliza carved a path of dedication and love throughout her life.
She pursued her education at Kowloon Chamber of Commerce College and the School of Nursing at the Hong Kong Medical and Health Department, completing her residency at Queen Elizabeth Hospital in Kowloon, Hong Kong. Her vocation as a nurse spanned over forty years, during which she exemplified care and compassion within her community.
On August 4, 1971, Eliza married Sheldon Shiu-Tat Poon at the Church of Jesus Christ of Latter-day Saints Salt Lake City Temple, marking the beginning of a cherished family life. Together with Sheldon, she nurtured a family filled with love, counting among her greatest treasures her children Ezra Poon and Susan Tan, her daughter-in-law Sarah Hsieh, and son-in-law Henri Tan. Her legacy of warmth and affection continues through her adored grandchildren: Enoch, Elah, Ephraim, Skyler, Kai, and Mia.
A resident of Salt Lake City, Utah, Eliza was a lover of nature, tending to her beautiful garden with the same care and attention she gave her family and friends. Her creative pursuits included writing Chinese poetry, calligraphy, and indulging in reading and cooking. Above all, she found joy in spending time with her grandchildren, imbuing in them her nurturing spirit.
Eliza's life was a beautiful tapestry woven with threads of care, with her gentle presence and hard-working nature leaving an indelible mark on all who knew her. Her essence will continue to live on in the hearts of her loved ones.
A viewing will be held November 10th at 12:00PM and Funeral Service will be held at 1:00PM at Wasatch Lawn Memorial 3401 S. Highland Drive, Millcreek, UT 84106-3316. Interment will follow.
