Jimmy graduated from Nacogdoches High School and attended Miami Dade Community College graduating with a degree in forestry. Jimmy went on to be a Sioux Chef in various places including: Zion National Park in Utah, Grand Canyon, Yellowstone National Park, Death Valley and Crater Lake. His favorite dish was veal parmesan. He retired in Florida for 18 years, but then moved back to Nacogdoches to be back "home". In his spare time he loved to research "Byrd" genealogy.
Survivors include: sister, Ruth Shallow; cousins, Helen Wagner and Thomasann Butler. He is preceded in death by his parents, and sister, Marcel Lee Cantrell.
Graveside Services will be held, 10:00 AM, Saturday, July 27, 2019, at Oak Grove Cemetery in Nacogdoches.
