

A formal and respectful remembrance is offered for Joe, a strong-willed, active man who was always keeping busy. He worked for 31 years with the State of Texas and was known for his steady dedication and determined spirit. Joe enjoyed walking five miles per day, and he lived as a man of faith, who extended unwavering love and devotion to his family.
Joe is survived by his wife, Rosa Carrillo; his sons, Richard Carrillo and wife Debra, and Rene Carrillo and wife Sheila; his siblings, sister Elizabeth Jasso, sister Alice Solis, sister Mary Cavazos, brother Emeraldo Carrillo and wife Jovita, and sister Delia Constancio; and his grandchildren and great-grandchildren: granddaughter Lauren Collazo, grandson Adrian Carrillo and wife Olivia, granddaughter Hannah Carrillo, grandson Noah Carrillo, granddaughter Lauren Garcia and husband John, great grandson Brody Collazo, and great grandson Trey Collazo.
Joe was preceded in death by his mother, Mary Torres; his father, Lester Carrillo; his brother, Lester Carrillo Jr; his sister, Carmen Carrillo; his sister, Ophelia Quiroz; and his brother, David Carrillo.
A Rosary will be held at Saint Williams Catholic Church on April 14, 2026. A Funeral Mass will be held at 10:00 am on April 14, 2026, at Saint William Catholic Church, 620 Round Rock W Dr, Round Rock, Texas 78681.
A Committal Service will follow at 11:00 am on April 14, 2026, at Cook-Walden/Capital Parks Cemetery, 14501 North Interstate 35, Pflugerville, Texas 78660.
