

In her 70 years, Elizabeth touched so many lives. Whether you knew her as Maribel, Mary, Elizabeth, LoPo, or Mom, the name she was most proud of was Grandma.
Strong and stubborn, Elizabeth lived her life her way. She always put others first, looking for ways to make people’s lives easier. She loved to joke and make people laugh. Her smile could light up any room. She had a way of making everyone around her feel welcome and important, like family. She lived her life to make sure her children, and now grandchildren, had the best life possible.
Moving to the US from Mexico at 23 years old, Elizabeth met her husband of 44 years in San Francisco. Never thinking she would make the US home, 3 kids later, she settled in Colorado where she never wanted to leave.
Upon arrival in Colorado, Elizabeth opened her home to run a childcare center for families who couldn’t afford it. This allowed her to help others while spending quality time with her children. Under her care, she treated every child as her own, loved them, and ensured each one had a fun and memorable childhood.
When Elizabeth’s children all entered elementary school, she found her secondary home at Dry Creek Elementary where she worked for 20 years as a cafeteria manager. She always had a passion for children and never wanted any child to go hungry. Because of her passion for that, we are asking in lieu of flowers to donate to Colorado Feeding Kids (www.cofeedingkids.org).
When you think of Elizabeth, she would want to be remembered as caring, loving, compassionate, welcoming, giving, fun to be around, and devoted to those around her. She would want you to remember to create experiences, enjoy the little moments and cherish time together whether over the holidays or just over a good meal.
Elizabeth is survived by her husband Simon, sister Virginia, three daughters Jennifer (Tom), Stephanie (Jake), Christina, and two grandchildren who will continue to honor her legacy bringing laughter and joy to others and living their lives to the fullest.
A Funeral Mass will be held on August 4, 2023 at 11:00 AM at St. Thomas More Catholic Church, located at 8035 S Quebec St, Englewood, Colorado 80112. A reception will follow.
Elizabeth will be laid to rest at Fort Logan National Cemetery in Denver, Colorado.
