Born on December 11, 1939 in Kamloops, BC to Joseph Poncelet and Anne Poncelet. Carol grew up in Brocklehurst on her Mom and Dad's orchard and farm where she learned to cook at the early age of 5! While still in highschool she went on to meet and marry the love of her life, Norman Hachey and proceeded to welcome four beautiful children, Elaine, Janine, Leanne and Raymond; and devoted herself to raising her family. She graduated from The Queen Elizabeth Sr. Highschool in Surrey, BC when she was 35 years old while Elaine and Janie attended the same school at the same time!
Carol had an amazing career as not only a Mother of 4 but sometimes working 3 jobs to support the growing family. Carol was an entrepreneur, where she utilized her baking skills, and owned, baked and ran a successful baking business for over 20 years! She also went out on a limb and purchased a corner store in Crescent Beach where she also added a little cafe called Carol's Coffee Clatch. There, she could share the passion of baking, and other than her huge hamburgers she also made pancakes that were as big as a dinner plate! Her hard work and ethics are passed on to her children who are thriving as a direct result of her love, strong ethics and compassion. After retirement, she spent 6 years traveling every winter to her pool home in Florida. Her love of animals was undeniable as she once brought home a stray puppy who we named Game which of course we were all thrilled about! There were always pets in our home growing up which added to the warmth.
Carol, when not baking for family and friends, loved strolling the beach for hours seeking out the best shells and using them to make garden stones from her old pie pans! She loved spending time outdoors and even took a real liking to being in her pool! She was a lover of music from Country, to some Rock n Roll and especially Elvis. Her favorite song was "Sweet Caroline"! She was devoted to her friends as they were always like family to her and her children.
She is survived by daughters Elaine Hachey, Janing Langford, Leanne D'Angelo, Raymond Hachey, her son, Richelle Bolduc (granddaughter), Korik Jones (Grandson), Logan Hachey (Grandson), her most recent love, Aria Bolduc (Great Granddaughter) and Judith Poncelet (Sister). She was preceded in death by Joe and Anne Poncelet (parents), Shirley Hartmeyer (Sister), Daniel (Boone) Poncelet (Brother), Leonard Poncelet (Brother), Daylen (Grandson) and Norman Hachey (husband and father).
A memorial service / celebration of life will be held on September 30th, 2026 at 1 pm at the Christian Reformed Church located at 5033 Roger St. Port Alberni, BC V9Y 5J8.
