Sally found joy in life’s simple pleasures. She loved working crossword puzzles, reading, and tending to her garden and flower beds. She never turned down her favorite treats—Reese’s Peanut Butter Cups, Kit Kats, Hershey chocolate bars, and a cold Diet Dr Pepper. Above all else, Sally treasured time spent with her family, especially her beloved grandchildren, who were the light of her life.
On November 25, 1977, Sally married the love of her life, Henry Mitchell, and together they built a life rooted in love, family, and shared memories.
She was preceded in death by her parents, Leroy and Doris Carroll; her sister, Cindy Groomer; and her niece, Jessica Smith.
Sally is survived by her devoted husband, Henry Mitchell; her son, Michael Mitchell, and his wife, Courtney; her brother, Guy “Bo” Carroll; and her four cherished grandchildren, Deagan, Brynlee, Adaleigh, and Jonathan.
In lieu of flowers, the family encourages memorial donations to First Methodist Church Canyon/Amarillo Campus, in honor of Sally’s generous spirit.
Graveside services will be held at 2:00 P.M. Tuesday, February 3, 2026 at Memorial Park Cemetery; 6969 East I-40, Amarillo, Texas 79118.
