

Carrol Jean McKnight-Outlay, 84, of Arlington, Texas, passed away peacefully on May 19, 2026, surrounded by the love of her family. Born on July 21, 1941, in Denison, Texas, Carrol was the cherished daughter of Drewey and Carrie McKnight and one of eleven siblings in a large and loving family.
Carrol lived a life rooted in love, devotion, and connection. She was married to Willie Jerome (Jerry) Outlay on February 18, 1967, in Denison, Texas. Jerry and Carrol became engaged after only knowing each other for two weeks - an enduring testament to their undeniable bond. Together, they built a life centered around family, friendship, and unwavering support for those they loved. Jerry lovingly honored Carrol’s final wish by ensuring she spent her last days in the comfort of their home, surrounded by those she loved most.
Carrol was a proud and devoted mother to her daughter, Andrea Carrol Outlay, born August 28, 1968, and her son, Anthony (Tony) Jerome Outlay, born May 11, 1973. Andrea and Tony were truly the lights of her life, whom she often described as her greatest accomplishments and greatest treasures. Though Andrea passed away in November 2013, Carrol kept her memory alive through stories and shared moments, ensuring her spirit remained present in the lives of all who knew her. We can only imagine the beautiful reunion between mother and daughter.
Carrol shared a special and unbreakable bond with her son Tony that endured throughout her life. No matter how much time passed, he was always her baby boy. As her children grew into adulthood, Carrol and Jerry extended their love far beyond their immediate family, becoming “Mom and Dad” figures to many of their children’s friends. Their home was always open, welcoming all who entered with warmth and kindness.
Of all the roles she held—wife, mother, sister, aunt, cousin, and friend—none brought Carrol more joy than being “MeMaw” to her beloved grandson, Austin Michael Lassetter, born September 25, 2000. From the moment he was born, Carrol proudly embraced her role as Austin’s MeMaw, affectionately calling him “Awesome Austin.” She celebrated every year of his life with a dedicated wall of framed photos, lovingly known as the “Austin Wall of Fame,” which she delighted in sharing with every visitor.
Carrol retired from the Civil Service of the United States Air Force, earning full military retirement—an achievement attained by only a select few civilians. Her dedication and service reflected her strong work ethic and commitment to excellence.
Her home was the heart of countless cherished memories. Holidays were filled with laughter, love, and togetherness, with her elaborate Christmas Village display becoming a treasured tradition that took weeks to prepare. She and Jerry also loved hosting game nights, strengthening bonds with friends who quickly became family. In 2002, they built their forever home, where they formed lasting friendships with neighbors who became an extension of their family.
Carrol had a deep passion for researching her family heritage and ancestry, preserving stories and connections for future generations. She believed in the importance of remembering where you come from and sharing those roots with others.
Carrol will be deeply missed by all who knew and loved her. She leaves behind her devoted husband of 59 years, Jerry; her treasured son, Tony; and the light of her life, her grandson Austin. She is also survived by numerous extended family members, and lifelong friends whose lives she touched in countless ways.
Though she is no longer with us, Carrol’s legacy of love, warmth, and unwavering devotion will live on in the hearts of all who were blessed to know her.
