She was born May 6, 1924, in Quail, Texas, to Clyde and Zelma Minyard Martin. Her adoptive parents were William Luther and Idabelle Cato Martin. Polly worked as a bookkeeper and office manager for Riverside Hospital near Robstown until her retirement in 1985.
She was preceded in death by her husband M. D. "Mac" McCarty, son Michael D. McCarty, granddaughter Pamela, her parents, a sister Clydine "Connie" White and brother Clyde Martin.
Polly is survived by one son Don (Barbara) McCarty of Austin, a daughter Kitti (Will) Ferrick of Dripping Springs, three grandchildren, Darcy, Mary and John, and seven great grandchildren, Candace, Chance, Summer, Karl, Marshall, Dustin and Margaret "Meg."
Entombment with her husband Mac will be held at Fort Sam Houston National Cemetery in San Antonio at a later date.
