Betty was born on November 2, 1944, in Milaca, Minnesota. She was one of four children born to Oscar and Mabel Rosenberg. Betty graduated from Milaca High School in 1962, and moved to Minneapolis where she met her future husband, Richard Engstrom. After a few years of courtship, Betty and Richard were married on September 5, 1966. They enjoyed 56 years of marriage.
In 1974, Betty and her family moved to Littleton, Colorado where they opened up Dick’s Ski’s and Sports. Along with her husband and children, Betty helped run the shop for 14 years while also being very active in her children’s lives. In addition to being both a Girl & Boy Scout Leader, she was heavily involved in school activities and sporting events.
After closing the store, she began a 26 year career working for Orthopedic Physicians of Colorado.
Upon retirement, Betty enjoyed attending multiple sporting events her grandchildren were part of. Whether it was tee-ball, ice hockey, flag football, basketball or baseball, Betty always made it a priority to be present to root for the kids. She loved to read books, was an expert puzzler, and loved to participate in the annual Christmas cookie preparations. Betty was a selfless person and always put the needs of others before hers. She always made sure everyone around her was happy and cared for.
Betty is survived by her loving family – Dick (Husband), Brian (son) and Nina Engstrom, Heather (daughter) and Kevin Flood, and Heidi (daughter) and Matthew McPeters and her grandchildren, Cooper and Owen Flood and Darren and Tanner Engstrom, sister Shirley Pfanstiel and brother Rich Rosenberg. She was preceded in death by her parents, her older brother Larry, and her fur grandkids Seamus and Angus.
