Monica had a wicked sense of humor. She was intuitive, witty, clever, and always the funniest person in the room. She had a big personality and an even bigger heart – you could see it in her love for her sisters, cousins, and animals (especially her dog, Penelope and her dad’s dog, Jig). She loved cooking from a young age; while other kids were watching cartoons, she was watching cooking shows. She was confident and brave and could do anything she set her mind to – whether she was swimming for her childhood swim team, cheerleading for the Cherry Creek freshman team, going to culinary school, or winning at card games (specifically Gin).
She is preceded in death by her sister, Cassady Erickson. She is survived by her mother Mindy Erickson, father Sean (Amy) Erickson, sisters Courtney Erickson and Lauren Erickson, as well as her stepsister Emily Armstrong, and stepbrother, Eric Schloesser.
Monica will be laid to rest alongside her sister and lifetime best friend, Cassady.
