

She was the oldest child of Irvin and Maude Fink. She had 3 brothers and 5 sisters. In 1942 Miriam met and married Wayne Klopfenstein. They worked a dairy farm, milking 40 cows twice daily until 1954 when they decided to move to Colorado Springs and became restaurateurs.
Miriam and Wayne had seven children, 5 boys and 2 girls. Every family member contributed to running the restaurants. They owned 9 different restaurants, one of which was open 7 days a week, 24 hours a day.
Miriam didn’t have much spare time, but she always had time for her church. She was one of the founding members of Beth-El Mennonite Church which started in a basement in the Nob Hill neighborhood of Colorado Springs back in 1955. She lived her faith and was a shining example of God’s amazing love.
Miriam was preceded in death by her husband, Wayne after 67 years of marriage, her youngest child, Douglas, her parents and 4 of her siblings. Six of her children remain to mourn her passing, James & Marilyn Klopfenstein, Ronald & Verna Klopfenstein, her daughter Sharon Mullet and her husband Art, her daughter Linda Francis, Roger & Patti Klopfenstein and her son, Jack Klopfenstein.
She has 20 grandchildren, 43 great-grandchildren, and 6 great-great-grandchildren.
Four of her sisters, Marjorie Freed, Beatrice Yoder, Wanda Nicholas, and Sherrill Yoder are still living.
She will be deeply missed by everyone who knew her.
