

Erin graduated from Grandview High School in Aurora, Colorado, attended the University of Northern Colorado, Greeley, and Texas A&M, Galveston. Later, she received certifications in dog training and shelter management and was working on her wildlife rehabilitation certification when she passed away. Erin was a volunteer at the Copperas Cove Animal Shelter where she helped dogs and cats find forever homes using her training talents, and video posts. She worked with service dogs, specializing in dogs for veterans and medical needs. Erin became the shelter's volunteer coordinator and was helping with the move to the new shelter in early 2026.
Erin had many interests including science, crocheting, embroidery, gardening and coloring. She was an accomplished equestrian during her youth. Her primary focus was on her family. She always placed her family first and chose to be a stay-at-home Mom for Jack. Their special family nights of making a tent and sleeping in the living room while watching a movie were a hit. Erin has left us with many loving memories and touched the lives of many people.
She is survived by her husband, Justin Lee Roberts of 17 years, son; Jack Lee Roberts, mother; Juliet L. Redding, father; Timothy J. Redding, grandmother; Elizabeth R. Lunsford, aunt and uncle; Nancy and Terry Allen, aunt; Joanne R. Brasher, parents in-law; Rick and Susan Roberts, sister and brother in-law; Meredith and Darryl Glanton, cousin; Jason R. Lunsford, nephews; Preston and Carson Glanton.
She is preceded in death by her grandfathers; Jay G. Lunsford, John E. "Jack" Redding, grandmothers; Violet Redding, Dorothy Redding, uncles; Jay W. Lunsford, and Jay Brasher.
A Celebration of Life will be held on October 25th at 1:00 PM in the chapel at Crawford Bowers Funeral Home, Copperas Cove.
