We are deeply saddened by the loss of our  cousin Nick. His death will leave a heartache that no one can heal,but the love he gave will leave memories no one can steal.
Although no words can  help to ease the loss his family bears, we pray  the Almighty Lord to give them courage and strength .
Please accept our most heartfelt sympathies and may his memory be eternal.

It was always such a pleasure to go to Rancho Escondido. You always made your customers feel right at home, and the food was so good. Remember when your place sat way out on Montana, but the trip was worthwhile. We'd make the trip all the way from Fabens to eat there.

Our prayers are with the family in this most difficult time.  It was great when we would ride our horses to the Rancho Escondido to have supper and Nick would love it as we added to his atmosphere and he put up a hitching post so we could tight ours horses. Couldn't believe it when I saw your picture in the paper Nick. Our memories of you and Shipley, her famous chile colorado con carne and your steaks oh and those margarita's at the Rancho will live with us forever. Your welcoming smile always made us feel right at home. Your keen eye in knowing what gender during an early pregnancy was something I never knew how you did. Your opera house was so cool! Nick, we will never forget how gracious and welcoming you were at Rancho Escondido.  You were family.  Shirley  was the best.  You were a great team.  We will always remember your great staff, Ramona and Jorge.  God bless and rest in peace.

Nick, Nick, our dear cousin and friend! We have so many memories of Nick and Shirley.  He took such great care of his beloved wife, never complaining.  He was the most patient man we have ever met.  Joe and I had a gallery at the Rancho Escondido property.  We had awesome times, meeting Nick's customers as they made their way to our gallery. Everyone loved and cherished Nick.  He was a kind, compassionate and giving man who was available for anyone, anytime!  He shared so many stories with us of his prized Opera House and the restaurant.  Those were good, good times.  After closing hours, we  would head to the Rancho Escondido Restaurant.  We had a couple of his  famous margaritas.  OMG!  Those were awesome.  One was all you needed.  That's when we all had a lot to talk about.  So much fun. Nick had a great sense of humor as well.  His beautiful smile was capturing.  He told us so many funny stories and had us rolling with laughter. He was a man filled with faith and love. He was humble and appreciated everything God gave him. He was so proud of his children and spoke of them loving. We loved Nick so  much and we will miss him. We are here for just a little while but then...we progress to our home in heaven as children of the Lord to carry on whatever he has for us.  So, Nick has gone home and one day, we will see each other again!  May God grant love and peace to his children.  Trust in the Lord, your God.  Lovingly, Joe and Irene Salem
