

She was born on November 20, 1947, in Winchester, Indiana to the late Gerald F. Elliott and Donna M. Stiffler (Royer) and was preceded in death by her husband of 53 years, Marvin G. “Merv” Simon on February 6, 2023.
Carol is survived by her two siblings, Greg Elliott (wife Marsha) of Union City, Ohio and Nikki Elliott of Indiana, along with her children, Brian K. Simon (wife Shannon) of Tennessee, James W. “JW” Simon (wife Amy) of Florida, Jennifer M. Spencer (husband Derek) of North Carolina, and Kimberly S. Sink (husband John) of Ohio; grandchildren, Brandon Simon, Haley Simon, Jonathan Stepp (wife Rachel), Conner Simon, Nadia Simon, Macy Sink, and Kaden Brookhart; great-granddaughters, Rayna Simon and Scarlett Simon; numerous cousins and nieces and nephews, and her most beloved cat named Babee.
She retired from the United States Department of Agriculture after serving nearly 18 years as a USDA grader for the Poultry Division. She previously worked for Westinghouse located in Union City, Indiana for more than 20 years.
To those who knew Carol best, she is most remembered for her sweet and selfless disposition and her warm and welcoming demeanor. She had many remarkable talents and her children commonly refer to her as highly creative in the areas of crafting, painting, costume making and drawing. Her grandchildren describe her as a wonderful and imaginative story-teller who always found a way to bring the characters to life while incorporating them into it.
She loved Ohio’s spring season and always looked forward to putting together several beautiful arrangements that she would enjoy while sitting on her porch and watching the hummingbirds.
Carol and her husband enjoyed many years of sight-seeing together while on road trips to visit their children, as well as taking in the many beautiful views along the water’s edge in Celina.
A celebration of Carol’s life will be held at 2 pm Tuesday, December 30, 2025, at Northside Community Fellowship located at 8135 State Route 127 Greenville with Pastor Randy Brown officiating. Burial will follow in Greenville Township Memorial Garden. The family will receive friends from 1-2 pm at the church. Carol’s family encourages memorial contributions to be made to Northside Community Fellowship in her memory. Arrangements are entrusted to Zechar Bailey Funeral Home in Greenville.
