

She was born and spent her entire life in Honolulu, graduating from McKinley High School, and then earning her teaching credentials at the University of Hawaii Manoa. After graduating, Amy worked for the Dept. of Education. She completed a brief stint at Waimanalo Elementary before moving permanently to Pauoa Elementary School where she taught kindergarten and 1st-grade students. She retired in June 1982.
Amy married Anthony D.K. Ching on July 11, 1948, and they raised three children: Eric, Alan, and Lisa. As their children grew older, Amy and Anthony started carving out time for their own recreation, including traveling and ballroom dancing.
Amy's husband Anthony passed in 2015 and their elder son Eric Ching passed in 2007. She is survived by son Alan Ching and daughter Lisa Ching who both reside in the San Francisco Bay Area. Amy is also survived by her younger siblings Nelson Chong of Mililani and Lauretta Saito of Stockton, California.
