

His journey took him from Hong Kong to London, then to New York, before settling in Jacksonville, Florida. As Lab Director for the State of Florida Department of Health Laboratories, he dedicated his career to protecting the health of countless children.
Ming was also an entrepreneur, owning Chinese restaurants in Jacksonville, including Little Dragon on Main Street, where he shared his love of systems and hospitality. His passion helped inspire his son to open Blue Bamboo in 2005.
He gave his time to the community through the Northeast Florida chapter of the National Alliance on Mental Illness. In retirement, he enjoyed visiting with guests at his son’s restaurant.
Ming is survived by his loving wife, Phyllis (Eng); his son, Dennis Chan (Elizabeth); and his grandsons, Bennett and Michael. Siblings include Boy Toy (Betty), Bicky Lee, and Kenny Chan (Wing). He was predeceased by his son, Mark, and siblings Mike Chan, Nita Wong and Larry Chan.
The family will receive friends on Monday, May 11, from 6–8 PM at Blue Bamboo, 10110 San Jose Boulevard, Jacksonville, FL 32257, with light bites and refreshments. In lieu of flowers the family has requested memorials to be made in his memory to: NAMIJAX.ORG
