Sandra Marie Eakins passed away unexpectedly on Saturday June 5th 2021 at the age of 69. Born April 11th 1952 in Rochester, Minnesota to James and Shirlie Frick, Sandi moved to Palm Beach Gardens with her family as a teenager in her final year of high school. There, she attended Palm Beach Gardens High School and became part of the very first graduating class of 1970, making many lifelong friendships. After graduation, she attending the University of Florida and transformed into a lifelong Gator fan. Moving back to Palm Beach County after college, Sandi became a very honest and successful business woman. As an owner and CFO of D.S. Eakins Construction Corporation, she helped the business grow and strengthen into what it has become today and will continue to be. After retiring, Sandi enjoyed hosting and planning all kinds of events, never straying too far away from home or her family. Sandi was a devoted mother, grandmother, sister, aunt and friend, always dedicated to those she loved. With an infectious smile and laugh, she lived life on her own terms. She loved being in the kitchen and always prepared the most delicious and abundant meals. Her signature dish was her Birthday cake and a birthday celebration wouldn’t be complete without one. Sandi was also an avid sports fan. Her Minnesota roots and her father’s love for hockey lived on in her. She religiously watched her favorite hockey teams; the Lightening and Wild. Sandi is survived by her son, Steven Eakins and wife, Amanda; grandchildren, Sadie and Stevie; sister, Cindi Frick; niece, Shelbi Smolak; and beloved Dalmatian, Palmer and Tortoise, Big Mama. Sandi was preceded in death by her father, James “Bud” Frick; mother, Shirlie Frick; and brother, Randi Frick. As we remember Sandi, raise an ice filled glass of Chardonnay, toasting to enduring friendships and cheering for your favorite team just a little louder. In lieu of flowers, the family requests you please carry out an act of kindness for someone else or make a donation to the Dalmatian Rescue of South Florida (https://www.dalmatianrescue.com/about/) in
her honor.
