

Mr. Trim was born to Ambrose Trim and Esther Felicien Trim on December 4, 1932 in St. Lucia, West Indies. He was raised to be a very compassionate and giving person.
Mr. Trim was a true gentleman. Everyone who knew him loved him. There was never a bad word said about him.
He was from a very adventurous generation and had traveled to many countries throughout his life. He had a sharp mind with a great memory that he used to share history about people whose lives he had connected with in some way.
The following is an excerpt written by Mr. Trim to help share his personal memories from his sailing days, “Hello Schooner Man, I worked on the TeVega when it was owned by Mr. Harold Miller and captained by Capt. Willoby in the early 60's. I joined the boat in 1960 and left the boat in 1962 under the leadership of Capt. Boisen. Capt. Boisen was from Sweden. I had a wonderful time on this boat. We sailed the Atlantic Ocean and Caribbean Sea mostly visiting the two dozen islands in the Caribbean chain. We carried famous guests such as Anita Edberg. I was the chef on the boat but had a lot of fun helping with the sail, etc. on deck. When I sailed her, she had a white hull. We were encouraged to enjoy ourselves with the guests often inviting steel bands to play on deck as we barbecued foods for our guests. The boat was leased to a university in California for pacific research. I sailed on the Windsong (36 foot Sloop) and the Windward Star (a 50 foot sloop). The most fun I had during my youth was on the TeVega. If you find out any other information about this ship, I would be glad to hear it. Sincerely, Lawrence Trim, Sr.”
Mr. Trim was a chef both on land and out at sea – he showcased his talents at hotels, yatchs, and ships including the TeVega and Windward Star. He had a passion for sharing his recipes with family, friends, and strangers. He had an amazing seasoning called “Trim Season Blend” that was famous in the Connecticut market, had many blends and sauces that restaurants began to replicate, and had creations published in gourmet magazines. He was a healthy and strong man who was known for saying, “Eat to live, don’t live to eat.”
Mr. Trim not only had a passion for cooking, but also enjoyed agriculture – all things plants and earth. He had a garden full of all kinds of vegetables including corn, eggplants, potatoes, and greens. After harvesting, he would share his wealth with neighbors and friends.
Mr. Trim truly believed in giving selflessly and making sure that everyone had something to eat. While in Connecticut, he would drive around once a week delivering food donations.
He was a hard worker who was never too old to give joy to others. After retiring from cooking, he worked as a self-employed painter and had repainted the cathedral at Saint Joseph’s School as well as the church’s rectory. Mr. Trim was a devoted Christian who loved reading his bible. He was a beloved member of Saint Catherine of Siena Church, before which he served as a member and usher for the Cathedral of Saint Joseph’s for 32 years.
Mr. Trim is preceded in death by his parents, Ambrose and Esther Trim; sisters, Josephine James, Martha Faustin, Thelma Jonas, and Vira Jonas; and brothers, George Jonas and Jones Jonas. He is survived by his loving wife, Viviana Phillip-Trim; sons, Lawrence Phil Trim Jr. and his wife Debra Page-Trim and Granville Ross Trim and his wife Carla Joseph Trim; daughters, Esther Liza Trim LeGrier and her husband Richard LeGrier III and Noela Schenelle Trim; siblings, Richard Lubrun, Ignatious Trim, Theresa Trim, Pauline Couloute, Catherine Julien, and Cecilia Lucien; grandchildren, Avery, Alex, Kiarsha, RossAndre, Zoë, and Garrett; and many nieces and nephews.
Mr. Trim was cremated under the care of Winkenhofer Pine Ridge Funeral Home. Memorial Services will be held at 10:30 AM Friday, May 1, 2015 at Saint Catherine of Siena Church in Kennesaw, Georgia with Father John Matejek officiating. A reception will follow at Liberty Church, 1285 Cobb Parkway North, Marietta, Georgia 30062.
