Polly Gaspar Xuncax, age 53, passed away peacefully with her family by her side on Thursday May 2, 2019 at JFK Medical Center in Atlantis, FL. She was born December 3, 1965 in San Miguel Acatan, Huehuetenango Guatemala to Manuel Gaspar Manuel and Maria Pedro Xuncax. She was a graduate from Thomas Jefferson High School in Los Angeles and Palm Beach State College. Polly married Juan Mendez in Spring of 2007. They raised three children. Polly truly loved life to the fullest through simple pleasures, chatting with friends and family. She enjoyed reading, YouTube videos and visiting National Parks. Polly had an unbelievable ability to reach people in a deep and positive way. She is survived by her husband Juan, her three children, Glenn, Chris and Mallyn, by her parents Manuel and Maria, by her sisters Dominga, Maria (Andres), Sonia (Eddie), Blanca, Maura (Tim), by her brothers, Valentin (Melinda), Benito (Melissa) and Garth, by her many nieces and nephews and finally by her precious dog Ruby.
