

She was born on March 17, 1929, in Köln, Germany to Ewald and Irmgard Koep. She had one brother, Dieter, who preceded her in death in 2019.
Edith was married to Walter Simons, Jr., whom she met in Germany after World War II while he was serving in the US Air Force. She came with Walter to this country in 1953 and they were married on December 26 of that year in Scranton, Pennsylvania. Walter was the love of her life and she reunited with him in heaven on their wedding anniversary, 67 years later. Edie and Walt raised four children and travelled the world with his military career, living in Japan and several US states. They settled in Las Vegas in 1971 and loved living in the Valley. Edie was a homemaker who loved cooking and baking and hosting family dinners. She was a passionate animal lover and rescued several dogs and cats over the years. Edie and Walt loved to travel and often revisited her home in Germany.
Edie is survived by her children Jill Ukeiley (Bob), of Georgetown, TX; Mark Simons, Karen Laub (John), and Heidi Miller Metellus (Jerry), all of Las Vegas, NV; five grandchildren: Courtney Ukeiley Kelly (Brian) of Austin, TX, Michael Laub of Baltimore, MD, Scott Laub of Phoenix, AZ, Karli Miller of Las Vegas, NV and Alaina Metellus of Las Vegas, NV; one great-grandchild, Finn Kelly, of Austin, TX; sister-in-law Ursela Koep of Remagen, Germany; nieces Dagmar Koep-Göres (Benno) of Remagen, Germany, Claudia Humpert of Bonn, Germany and their children.
The family requests that in lieu of flowers, donations can be made to a local animal rescue of choice.
