Emily was born on August 11, 1922 in Evenwood, England to John and Hannah Gaffney. She trained as a nurse in London, England where she began her career during WWII. She traveled with her mother and 2 of her sisters, across the Atlantic Ocean on the Queen Mary to Boston where she lived and continued her nursing career for the next 3 years. After moving to Los Angeles, she married Brendan McCoy in 1958. The couple welcomed 5 children, and Emily set about raising her family with faith and love.
