Kathy started working at Original Cookie Co, in the Midland Park mall in 1993. She was promoted to assistant manager after a year of employment. In 1999, Kathy became the manager for Great American Cookie at the old Original Cookie store in the mall. This year after 23 years of working at the cookie store, Kathy resigned and went to work for HEB, as their new Bakery manager. Her years of being in customer service in the mall allowed Kathy to meet many people who would always refer to her as the "Cookie Lady" or "Kat". She did a GREAT community service by hiring and training high school kids, single moms, and those needing a second chance in the work world.
Kathy is survived by her two sons Nathaniel Lujan, LeeAdrian Gonzales, her father and step-mother, Bruce and Maty Paget, her mother Judy Kim, her brother and sister –in-law Paul and Renee Paget and numerous nieces and cousins.
A memorial service will be held at the Ellis Funeral Home Chapel on Thursday, July 21, 2016. At 7:00 p.m.
