Eleanor Rose was born to Martin and Carrie Dietz on June 4 1934. She grew up on a farm as the 6th of 7 children, where she learned the value of hard work at an early age. From caring for the farm animals to learning to cook at the age of 5, her hands were always busy. She graduated from South High in 1951.
Prior to graduating, she met the love of her life, Ken Stahl, at a summer dance in Papillion. They dated for a year and married on July 21, 1951 at Zion Lutheran Church with a charivari dance at Millrose Ballroom. They lived in Omaha, Gretna, Elkhorn, Kimball, and finally settled in Papillion in 1958. Eleanor was always behind the scenes keeping the books and as they built their real estate dreams.
Amidst working several jobs, Eleanor's loving hands helped raise five daughters. Connie, Patti, Debbie, Kendel, and Jody kept her busy with school activities, making sure they had perfect attendance at Sunday School each week (even when traveling), and settling disagreements when one of the five daughters took too long in the bathroom! While the girls were growing, Eleanor enjoyed volunteering in the kitchen for Job's Daughters and supporting their love for barrel racing. As each of their daughters married, she happily made most of the reception food, including hundreds of mints.
During her retirement years, Eleanor found joy spoiling her 10 grandchildren and 14 great-grandchildren. She loved traveling to all 50 states with Ken and especially enjoyed spending the winter months in Scottsdale. Eleanor found other ways to keep her hands busy through the years with baking, golfing, sewing, and playing cards.
