

Edith graduated from West End High school in Birmingham. In addition to raising five children, she was a businesswoman and professional model. She operated the Seahorse, a shop in Laguna Beach, FL, where beachgoers could buy soda and sandwiches. She also managed a seafood restaurant at Bay Point Yacht and Country Club.
Edith enjoyed gardening, canning vegetables, Southern cooking, and finding seashells on the beach. She was a devout Catholic who will be remembered for her kindness toward others.
Edith was predeceased by her mother, Billie Landers, and stepfather, J.R. Landers; father, John B. Jackson, and stepmother, Mamie Jackson; two sisters, Elizabeth Vineyard and Elaine Jackson; and husband, Roy Carter.
Survivors include Edith's sister, Sandra Campbell; son, Michael J. Carter (Michele); son, Mitchell Kelley (Karla); three daughters, Cathy Carter Parrott (Rick), Michele Carter, and Rita Carter Jones (Clark); grandchildren, Kelly Carter, Karrey Shannon, Niki Wayner (Rob), Scott Parrott (Caroline), Emily Kramer (Eric), Brett Leonard, Bryan Leonard, Brooke Leonard, Nicholas Jones (Shelby), and Jillian Jones; and great-grandchildren, Emma Grace Wayner, Sam Wayner, Collins Caldwell and Lucy Jones.
Visitation will be from 5-7 p.m. on Sunday, July 31, 2016 at Ridout's Southern Heritage Funeral Home, Pelham, AL. The funeral will be at 11 a.m. on Monday, August 1, 2016 at Ridout's Southern Heritage Chapel, Pelham. The Rev. David John Peacock will officiate. Burial will be at Midway Memorial Gardens, Jemison, AL.
