

In 1929, at the start of the Great Depression, Mable and her family moved to China. Mable returned to Chicago, where in 1940, she married Joe Quock Fung. The couple operated a grocery store in Osceola, Arkansas, and relocated to Houston in 1949, where they operated Joe Sing Food Market with her brothers-in-law until 1982. Over the years, Mable often returned to Chicago, where she worked in Chinatown restaurants and was close to her family. After years of working in Chinese restaurants, she was quick to offer cooking lessons and taught more than one generation how to make baos , dumplings, rice noodle rolls, and joong.
Throughout her long life, Mable was always kind and generous, willing to help those in need in whatever way she could. Mable celebrated her 85th birthday by returning to Gaozhi, her ancestral village in Guangdong Province. She reunited with old neighbors and cousins she hadn't seen in 69 years. She was so moved she actually broke out in song.
The family would like to thank the staffs at Park Manor Bee Cave Skilled Nursing Rehabilitation, Austin Wellness and Rehabilitation, and St. Gabriel's Hospice for all their care, kindness, and attention to Mable.
She was preceded in death by her husband, Joe Quock Fung, her daughter Hazel, and her son, Franklin. She is survived by her son, Raymond Joe, and his wife, Janet, her son Edison Joe, her son, Franklin Joe's wife, Gina, her daughter, Joyce Hellums and her husband, Mark Hellums, her daughter, Nancy Joe and her husband, Jess Harrington, her daughter, Emery Jansen and her husband, Doug Jansen, and her daughter, Mary Ann Fitch and her husband, Jon Fitch. She is also survived by fourteen grandchildren and 9 great-grandchildren. Mable was preceded in death by her four brothers, Frank Fong, George Fong, Joe Fong, Suey Fong and her sisters, Mary Hue and Alice Kai. She also is survived by her sister, Helen Moy, of Chicago.
A viewing was held at Cook-Walden/Capital Parks Funeral Home and Cemetery, 14501 N. Interstate Hwy 35, Pflugerville, Texas. 78660 on Wednesday, February 19, from 9:00 a.m. to 10:30 a.m. with the burial following at 11:00 a.m. A memorial service to celebrate her life will be held 10:00 a.m. on Saturday, March, 15, 2025 in the Cook-Walden/Capital Parks Mausoleum Chapel.
