
Soo was born on May 1st, 1923 in the Toy San region of China to Sun Lee Toy and Wai Chun Lee. She was the middle child of three children. In 1939, she married Ben Chuen Huey. They had two sons, Gene and Calvin.
In 1953, Soo immigrated to America with her son Gene and was reunited with Ben. She always viewed America as the land of opportunity and she felt blessed to be here. She took advantage of any and every opportunity that came her way. She would work two, three and sometimes four jobs at the same time. Along with Ben, they started up their own bean sprout business – growing, washing and bagging bean sprouts with delivery to Asian grocery stores and restaurants. She was a hard-working woman.
Soo strongly believed in two things – education and family . Education, coupled with hard work and perseverance, was the foundation to success. Family meant everything to her and was the purpose that drove everything she did. She made sure her sons received a good education and she made sure her family was always together.
Not only did Soo have a strong work ethic, she was intelligent, loving, caring, generous, friendly and fearless. She was a selfless woman – everything she did, she did for her family. She could always be called upon to help out because she would be happy to do it.
Soo lived a long, happy life amidst a very loving family. Her favorite things in life were gardening, cooking and spending time with her family and friends. Throughout her life, she was able to see her sons grow up, become successful and have loving families of their own. She took good care of her grandchildren and later was able to enjoy her great-grandchildren. Along the way, she instilled her values in each generation and these values will continue to live on. She was always there…and she forever will be in our hearts and souls.
She is survived by her brother, Jack Choi, sons Gene Huey and Calvin Huey; grandchildren Cheryl Montgomery, Clinton Huey, Cathy Huey and Clark Huey; great grandchildren Emerson Montgomery, Audrey Montgomery and Scarlett Huey.
Funeral services will be held at 10: 00 a.m. on Thursday, December 15, 2011, at Lincoln Memorial Park, 11801 SE Mt. Scott Blvd., Happy Valley, OR with a lunch reception at Golden Horse Restaurant.
