

Patsy Beatrice O’Quinn Galbreath, 88, died Friday April 8, 2016 at the Mississippi State Veterans Home in Jackson, MS after a long illness. Mrs. Galbreath was born on June 26, 1927 in New Orleans, Louisiana. The daughter of the late Isaac Calvin O’Quinn and Missouri Beatrice Tucker O’Quinn was a 1944 graduate of Byram High School and a 1946 graduate of Hinds Junior College in Raymond, Mississippi. She furthered her education at Mississippi State College for Women (MUW) majoring in Dietary Science. After completing her internship in the Theory and Practice of Nutrition and Diet Therapy as prescribed by American Dietetic Association at the prestigious Touro Infirmary in New Orleans, she graduated with a Bachelor of Science in Home Economics in 1948. She became a Registered Dietitian and began her career at the Vicksburg Hospital, Vicksburg, MS, and continued at Chamberlain-Hunt Academy, Port Gibson, Mississippi. She continued her career at the Veteran’s Hospital in Jackson, Mississippi where she became the Assistant Chief Dietitian.
Mrs. Galbreath’s next career move was to the University of Mississippi Medical Center where she initially served as a Staff Dietitian. She was able to work closely with the UMC Organ Transplant Research Teams due to her interest in food chemistry, and accepted a promotion as Research Dietician with the Kidney Transplant Team. Additionally, she taught Basic Nutrition to Student Nurses and provided In-Service training for Patients and Employees during her career.
Upon retirement Mrs. Galbreath served in a voluntary capacity at hospitals in Greenville, South Carolina, Hattiesburg, Mississippi, and Jackson, Mississippi. She also assisted with Mother’s Morning out programs in local churches.
She was an active member of Ridgeland United Methodist Church. She enjoyed crafts, knitting, gardening and reading her scriptures.
She was predeceased by husband of 55 years, Colonel Jasper F. Galbreath and her loving grandson Andrew Galbreath Sandefur. Her Survivors include her daughter, Elizabeth Steel and husband, David of Windmere, FL; daughter, Janice Sandefur and husband, David of Pearl, MS, daughter, Cynthia Latina and husband, Lee of Sarasota, FL; Grandchildren, Jennifer Johnson and husband, Kenny of Riverview, FL, Jarrod Ross Leach of Portland, OR, and Cameron Wayne Leach of Chapel Hill, NC.
