

Catherine had a gift for making others feel cared for, often through the meals she lovingly prepared and the warmth of her home. She absolutely loved sewing and cooking for her family and friends, creating cherished memories around the dinner table. In her quiet moments, she enjoyed sitting for hours with a crossword puzzle or playing her favorite game on her tablet. Catherine especially looked forward to Halloween night, when she could sit outside, greet her neighbors, and pass out candies to children with a smile.
Her greatest joy was spending time with her family, who will forever remember her love, humor, and gentle spirit.
Catherine is preceded in death by her husband, Tito V. Escobedo; daughter, Anna Olmos; son, George Escobedo; parents, Diego and Esther Salazar; brothers, Diego Jr. and Richard Salazar; and sister, Susie Rodriguez.
She is survived by her sons, Victor Gonzalez (Theresa), David Escobedo, and Tito Escobedo Jr. (Sandra); daughters, Maria “Queta” (Rick Flores) and Veronica Escobedo (Jose Hernandez); son-in-law, Ricky Olmos; 21 grandchildren; 33 great-grandchildren; five sisters; two brothers; and numerous nephews, nieces, extended family, and friends.
Catherine’s life was a beautiful testament to love, family, and kindness. She will be deeply missed and forever treasured in the hearts of all who knew her.
