

Lucy entered this world as the adored first child of Horace N. Burton and Helen Greer Burton on Nov. 19, 1947, in El Paso, Texas. After a short illness related to a chronic heart condition, she passed peacefully into her next life on March 20, 2022, in San Antonio.
She is survived by her brothers, Douglas and George Burton, nephews Daniel, George W. and niece, Michele Burton as well as her Uncle Bill Mitchell, Aunt Mary Mitchell and many cousins.

Lucy grew up in Midland, Texas following in the footsteps of parents and grandparents who valued education and commitment to the larger community. She loved being part of organizations, including Girl Scouts, Baptist Youth groups and school clubs.
After obtaining her Bachelor’s Degree in Home Economics from Texas Tech University in 1969, Lucy started her working career as a flight attendant for Continental Airlines and toured the world in the early 1970s. Then, tiring of the travel and wanting to live a life more connected to nature, she began a life-long fascination with organic gardening and healthy natural lifestyles. She became a published expert on growing sprouts and co-directed a spiritual center in Corvallis, Oregon where she taught gardening, yoga, health awareness and nutrition. In 1988, Lucy transitioned to a career in adult education and community outreach. In 1989 she earned her Master’s Degree in Adult and Continuing Education from Washington State University. Throughout her life, she expanded her education in natural foods, gardening, health and wellness.
Returning to Texas in 2001 to assist her mother during her elder years, Lucy took up a leadership role in Women’s Global Connection at The University of the Incarnate Word in San Antonio. Lucy loved working with The Sisters of Charity, doing public relations, event planning, web communications and community outreach. She cherished the Sister’s spiritual and physical commitment to building a better world.
In 2008 until her retirement, Lucy was Director of the SoL Center at the University Presbyterian Church, where she organized projects for adults seeking to explore the applications of faith to the life challenges of the 21st Century.
Lucy filled her life with her enjoyment of nature, gardening, learning and teaching. She continually searched for meaning in life’s larger questions and in how small individual actions could enrich and improve the lives of family, colleagues and fellow citizens wherever she lived, whether in Oregon, Washington State or Texas.
