

Born in China, Vicky’s life was defined by courage, determination, and an unwavering commitment to family. She and her family fled China to Vietnam to escape communism and, again in 1975—on the day before her newly adopted country fell—made the brave decision to leave Vietnam and begin a new life in the United States, carrying with her resilience, hope, and an unshakable belief in the promise of hard work.
From the very beginning, Vicky dreamed of owning her own business. That dream became reality in 1985 when she and her siblings opened Beijing Restaurant in Castle Hills. What began as a small family endeavor grew into a beloved community institution, known not only for its food but for the warmth, discipline, and pride Vicky brought to everything she did. The business expanded to include not only the fine-dining flagship restaurant, but also several fast-food locations and other properties throughout the San Antonio area. She was the face of the restaurant, greeting every customer as they arrived, and was well known by her regulars. Her family often joked that to see her, you had to go to the restaurant, as she was always there. She devoted decades to the restaurant industry, retiring in 2018 after a lifetime of service and entrepreneurship.
Above all else, Vicky believed deeply in the power of education. She instilled this value in her children through example, sacrifice, and high expectations. Her greatest pride was seeing all four of her children graduate from The University of Texas at Austin, a testament to her perseverance and devotion as a mother.
Vicky faced adversity throughout her life with grit, grace, and determination. She never shied away from hard work, and she met challenges head-on with quiet strength and resolve. To her family, she was a loving mother and sister, a role model, and the steady foundation upon which generations will continue to stand.
She is survived by her children: Warren Lieu, Mary Lieu-Lapoint (her husband Glenn), William Lieu, and Rosa Lieu; her grandsons, Stig Lapoint and Zephran Lapoint; and her brothers and sisters: Dong Luong, Chuck Leung, Grace Giang, Sonny Giang (his wife Gail), Ming Raymond (her husband Robert) and Dan Giang (his wife Jaclyn).
She was preceded in death by her husband, Dung Lieu, and her parents, Chau Giang and Dieu Luong.
She leaves behind a legacy of courage, entrepreneurship, family devotion, and resilience that will live on in the lives she shaped and the values she passed down.
Nu Ha “Vicky” Giang will be deeply missed and forever remembered.
A Celebration of Life will be held at Sunset Funeral Home, located at 1701 Austin Highway, San Antonio, Texas, 78218. The service is scheduled for January 22, 2026, beginning at 12:30 pm.
