

Jim was born June 16, 1936 in Butte, Montana as the third child of George and Argryo Demos. At age 15, Jim's family moved to San Diego where he attended San Diego High School and helped at his parent's grocery store, where he eventually became the butcher for the grocery store. Jim attended San Diego State University where he achieved a degree in education while working as a cook in the National Guard.
In the summer of 1961, Jim was introduce to Electra, his future wife and soulmate. From their first date, they have been inseparable sharing life and love for 65 years.
After completing his 8 years of National Guard service, Jim found his calling as an elementary school teacher, working with fourth through sixth graders for the next 35 years. Jim fondly reflected on his career saying he never worked a day in his life, as he loved teaching and playing dodgeball, autoharps and singing with the kids.
Jim was a notorious tinkerer; loved cooking, restoring cars, making furniture, and generally building and fixing anything friends and family needed. He also was an active member of Saints Constantine and Helen Greek Orthodox church, where he directed choir for more than 20 years. He also built game booths when the church started having a festival and ran the booths for many years, giving the festival a fun "carnival" atmosphere.
Once retired, Jim and Electra moved to Temecula, where Jim would spend his later years surrounded by loved ones. Known as Papou to his grandchildren and neighbors alike, Jim perfected numerous recipes and treated his loved ones to his famous English Muffin bread, baklava, and incredible meals.
Jim is survived by his wife Electra; brother Bill (Marion); children George, Pete (Liza), Anastasia; and grandchildren Leighton, Matthew, Evan, Demetri, Jacob, Maia and Zoyia. He is predeceased by his brothers Chris (Virginia) and Anthony. Our beloved Papou, father, uncle, brother, husband and soulmate is deeply loved and sorely missed.
Funeral services will be held Saturday, November 29 at St. Constantine and Helen Greek Orthodox Church 3459 Manchester Avenue, Cardiff-By-The-Sea. Trisaigon: 10:00am; Funeral: 10:30am
