Minta Beth Larsen

Beth was born on June 6, 1946 in Torrance, CA, to George Irwin and Eda Mabel Canon (Gaston). She was the middle of three children, to include Larry and Alan.

During high school in Pomona, she was the president of her debate team. She also did very well as a thespian.

She married Joseph Roarick in Chino, CA, in November of 1964, while he was serving in the USAF. They had a daughter, Karan. Beth and Karan lost Joe on May 27, 1968.

Beth and Karan moved to Washington, and Beth went on to S.C.C. in Spokane and earned her LPN. She worked at Sacred Heart for her student nurse training, then became a private duty nurse.

In December of 1970, Beth was set up on a blind date with Darrell J. Larsen. The two have been inseparable ever since. They were married on April 29, 1972 in Opportunity, WA. Together with Karan, they welcomed baby Kathaleen to the Larsen family later that year. This family now includes numerous grandchildren and great-grandchildren.

Beth has has long enjoyed sharing with and teaching others. To name a few classes, she taught college and career, numerous Bible studies, and she headed up many women's ministries.

She was a Lay Minister for the Free Methodist Church and went on to be an Ordained Minister through the Evangelical Church Alliance.

Those who knew Beth, know that she would fill a room with her laugh, smile and personality. She will be missed, but we know that she is rejoicing in Heaven with those whom have gone before her. Although she leaves behind her husband of 52 years, two daughters, her brother, numerous family and countless friends, we know we will see her smile and hear her laugh again

A visitation for Minta will be held Friday, February 14, 2025 from 10:00 AM to 12:00 PM at Thornhill Valley Chapel, 1400 S Pines Rd, Spokane Valley, WA 99206. A celebration of life will occur Friday, February 14, 2025 from 12:00 PM to 1:30 PM, 1400 S Pines Rd, Spokane Valley, WA 99206. A graveside service will occur Friday, February 14, 2025 from 2:00 PM to 2:30 PM at Pines Cemetery, 1402 S Pines Rd, Spokane Valley, WA 99206.
