Mandy was born on June 13,1979, into the loving family of Nicodemus (Hing Keung) and Nancy (Chiu Ling) Tang in Hong Kong. She was the one and only precious jewel of her proud parents. Mandy’s childhood was filled with love, laughter and mischief. Growing up, Mandy was never bored or lonely, as she was surrounded by loving and caring parents, cousins, aunties, and uncles.
Mandy was a cute baby with a sweet personality. She drew plenty of attention to herself, and she never lacked friends to play with. One time, during a family outing, Nicodemus put baby Mandy down on her tummy for a quick photo shot, and passers-by quickly drew their cameras and took a few snaps of the cute baby.
Nancy reminisced about how Mandy was already smart and witty during her pre-school years. She would give the most amusing comments or replies that brightened up the atmosphere. On one occasion, both Nicodemus and Nancy were caught up at work and did not pick up Mandy from school. The 5-year-old Mandy borrowed a phone from a near-by store to call her mom, Nancy, and ask her to come pick her up.
During Mandy’s elementary school years, Nicodemus and Nancy decided to move to Cheung-Chau, an island in Hong Kong popular with tourists. Nancy decided to stay home so that she could focus solely on Mandy and give her the utmost attention and dedication as a mother. Those years in Cheung Chau became some of Mandy’s best childhood memories. Mandy was the coolest kid on the block since she was from the big city with all the fancy toys. Friends loved to come to play, and she was generous enough to share her toys with them. Mandy also loved to spend time at the beach. On one occasion, she was almost trapped by a high tide but managed to escape safely.
Growing up, Mandy was close to her cousins, especially Joyce Yuen. To Joyce, Mandy was a constant source of inspiration, radiating intelligence, humor, and maturity. Mandy was her lifelong confidant, role model and favorite person. As kids, Mandy was the person Joyce admired the most. During their childhoods, Mandy was perceived to have an extraordinary ability to think ahead and view the world with a depth of understanding that significantly inspired Joyce. Joyce feels incredibly fortunate to have shared so many moments and laughter that shaped her into the adult she is today. The lessons Mandy taught her, the love, bonding and memories are gifts that Joyce will cherish forever. (Love from Joyce)
Mandy attended high school in Hong Kong City, where she was fortunate to be part of the “9 big sisterhood” and created tons of unforgettable memories. The bond she had with those girls shaped and molded her into the confident, independent, and beautiful lady we all knew.
In high school, Mandy met her bestie, Melody Kwok, and they were diehard friends who went through thick and thin together. Melody recalled that Mandy was the first friend she made after starting high school. Since then, this amazing little girl with pink-framed glasses and curly bangs has always lived in Melody’s heart. Melody adores Mandy because she was tough yet with deep affection. Melody also admires Mandy’s frankness and bravery. Throughout their five years of high school friendship, they were almost inseparable every day. In the happiest days of Melody’s life, Mandy was always there with laughter. Although they have had fewer gatherings and more separations as they grew up, Mandy remains Melody’s dearest friend throughout her life. They have always cared for and supported each other from afar, accompanying each other through countless ups and downs. Melody still misses the days when Mandy ran like the wind on the sports field, and now Mandy can finally soar freely into the sky. Melody wants Mandy to know that if Mandy is the one leading the way, she doesn’t mind always running behind Mandy. Though the race on earth has ended for Mandy, Melody will always remember her as their all-time champion. Let them meet again at the finish line someday. (Love from Melody).
Mandy breezed through the academics of high school and was presented with an opportunity to pursue higher education in the United States of America. She came to Texas in 1997, where she pursued higher education at the University of Houston, graduating with a Bachelor of Arts in Economics in 2004. During her college years, she developed many friendships, some of which remained deep and enduring throughout the rest of her life.
After college, Mandy worked at various companies, ultimately finding a fulfilling career with Pitney Bowes Inc., where she was a dedicated and valued team member for over 17 years. Mandy was someone her teammates could always rely on. She had the kind of patience that made others around her feel calm and relaxed. Though she was often quiet and reserved, those who knew her knew that she had a strong, caring, and compassionate heart and spirit. Her teammates truly felt blessed to have Mandy on their team. Her contributions were many, and her impact will never be forgotten. (Appreciation from Jeremy)
In 2009, Mandy turned her love for baking into a business opportunity by establishing her online cupcake liners store – CakeWithLove.com. Her products, dedication and outstanding service won many praise and loyal customers from all over the United States.
Mandy met Zach at Fort Bend Community Church through young adult fellowship, and they started dating in 2010. Zach is part of a big family, and Mandy had to make huge adjustments to get used to that. She later realized that this was all part of God’s plan and was grateful to have each family member. The two felt a strong affection for each other and were married in 2011. They settled into their first home in Houston in 2012 and spent the first six years enjoying their newlywed life, serving at church (Sunday worship co-singer and children’s Sunday school assistant), traveling, and planning family gatherings. In 2016, the couple prayed for a baby and the prayer was answered. They joyfully welcomed their first child, Izaac GuoRui Ng, in 2017 and moved to their second home in Missouri City. Two years later, in 2019, Adelene QianLe Ng, joined and completed the blessed family of four.
In their 13 years of marriage, Mandy was a devoted wife of Zach, and together they built a beautiful life, raising two wonderful children. Zach and Mandy always planned fun activities to do together. She guided Zach in making decisions, steering him in the right direction. They dreamed about home renovations, traveling to various places, and many future plans for the family. Their favorite activity was exploring new sushi restaurants, ramen shops, and the hottest bubble tea shops in town. Cooking and baking were not just hobbies for her—they were expressions of her love for her family. She loved creating new dishes and baked goods and would always share them with friends and family. The kitchen was Mandy’s happy place, and she always had a radiant smile when she was there, cooking up a great meal. Nothing made her happier than seeing her baking and cooking being appreciated.
To the younger generation in the family, Mandy was always “Auntie Mandy.” She was the one person who managed to control their unruly uncle, Zach, and made the best Japanese cheesecake, the cutest cupcakes, and delicious Brazilian cheese bread. Auntie Mandy always brought back incredibly cute shirts and stationery for Izaac, Adelene, and their cousins to enjoy. She was a steady presence in the lives of her kids, her nephews, and her nieces. Even during her toughest times, Auntie Mandy always made sure to offer a bright smile.
Mandy was diagnosed with stage 4 lung cancer in October 2021 and began her treatments at MD Anderson Cancer Center soon after. Her strength, grace, and faith were especially evident during her battle with cancer. Throughout her illness, she never lost her hope in the Lord and faced each day with courage and a peaceful heart. Zach’s extended family was their biggest support during those trying times. The entire family experienced a transformative faith journey through Mandy’s battle with cancer. The countless worship songs, prayers, and scriptures on Saturdays became a source of strength and hope. The 1:1 morning prayer, sharing, and declaration times, with one of the family members, provided a sense of peace and reassurance, allowing them to experience God’s presence in every moment of their lives. The family will always cherish the Saturday afternoon tea times with Mandy, when laughter and life stories were shared. In addition, brothers and sisters from church, as well as close friends, showered them with prayers, love, babysitting, and delicious meals.
Despite her discomfort and pain, Mandy always put her family before herself. She made it a priority to take the kids to places that would create precious memories. During the last two months of her life on earth, even after losing her mobility and suffering immense pain, she insisted on visiting the zoo, parks, malls, and playgrounds with her family - places the kids love the most.
Mandy constantly reminded Zach that God is in control and that they should not fear what the future holds because God is holding their future. She would refresh Zach’s memory of God’s past guidance and protection for their family. She encouraged Zach to continue serving and putting God first. Mandy was impressively brave and calm, trusting the Lord with her life.
Proverbs 31:25 (NLT) says, "She is clothed with strength and dignity, and she laughs without fear of the future". This Bible verse best summarized Mandy’s lifetime on earth.
Mandy is survived by her loving husband Zach; their children, Izaac and Adelene; her parents, Nicodemus and Nancy Tang; and many extended family members and friends who will forever cherish her memory.
Mandy’s legacy of love, laughter, and faith will live on in the hearts of all who knew her. She will be deeply missed, but we find comfort knowing she is now in the arms of our heavenly Father.
