Elsie was born on December 22, 1921 in Addy, Washington to Martha and Dietrich Nickel. She was the eighth child of twelve siblings and grew up in Elma, Washington. There she explored the woods, picked berries, rode the family pig, tap danced on an old tree stump, and found herself on many more adventures.
Elsie married William Jones in 1939 and the beginning of their marriage took Elsie to Alaska, where she and her son, Ron, were evacuated due to the bombing of Peal Harbor. They then moved to Kentucky, Ohio, Missouri and back to Washington. The family eventually ended up at Summit Lake where only two other families lived at the time. Eventually, they built a log house on Summit Lake Road, where they retired.
On March 9, 1989 Elsie married Armin L. “Al” Griffith in Lacey, Washington. They traveled and spent time with family during the years they were together. After Al's passing, Elsie to moved to her home on Stephen Court where she continued to paint, bake and enjoy visits from family and friends.
Elsie hiked the Olympic Mountains, was a local artist, panned gold, smelted on the Cowlitz River, made wine, baked perpetually, collected and restored antiques, became a licensed dietician when she was 60 years old, and was "Grandma" to many people. As a member of Our Redeemer Lutheran Church, she was baptized on October 14, 2002 and hosted a bible study group regularly in her home.
Elsie is survived by two sons, four grandchildren, twelve great grandchildren, and three great great grandchildren.
