Eloise was born on March 25, 1924 in Timpson, Texas to Jessie Mae and Elmer Nichols. She graduated from Sam Houston State in 1945 and began a 30 year teaching career which included tenures in Lake Jackson, Refugio, New Orleans and Fort Bend County.
In 1953 she married Eldridge Adair of Beeville, Texas and soon gave birth to her only son, Charles Gary Adair.
All who knew Eloise, knew that Gary, his wife Betsy, and their children were the pride and joy of her life. She relished in their accomplishments and supported them in all that they did. A phone call to Eloise was always filled with encouragement and support. Eloise truly had a gift for building up the ones she loved. She was a steady voice of reassurance and confidence.
Eloise went back to school in 1975 to obtain her masters in Library Sciences. She lived a life of independence, travel and relished moments spent with her friends. She will be most missed on Thanksgiving mornings, standing over her famous gravy, one dish of many that inspired recipes in the Adair family restaurants. In 2016, the Adair grandchildren opened Eloise Nichols Grill and Liquors in her honor. She was so proud and enjoyed many fun times in the restaurant over her signature cocktail, the Eloise Sour.
Eloise carried a quiet confidence with her alongside an elegance obvious to all. She inspired by example with her self-confidence, independence and no nonsense sensibility. She was truly a woman ahead of her time.
Eloise was preceded in death by her husband Eldrige, her parents and her two brothers: Jack Nichols of Huntsville and Billy Nichols of Bay City. Eloise is survived by her son Gary Adair and his wife Betsy. Grandchildren Katie Adair Barnhart and husband Paul, Nick Adair and wife Alice and Scott Adair, all of Houston. And, “her sweetest things,” her great grandchildren, Wynn and Ada Barnhart, and Lulu Adair.
There will be a celebration of Eloise’s life at her namesake restaurant Eloise Nichols Grill and Liquors at a time to be determined. May we all give thanks for the many gifts she left us and look forward to the day that we will all be together again.
