Carol was born on September 7th, 1940, to Tom and Birdie Dollard in Arkansas and shortly after moved to Los Banos, CA. Carol graduated from Los Banos High School in 1958. After high school, she attended cosmetology school and worked as a hairdresser in her salon for many years. Carol moved to Petaluma and married her first husband, Jerry, and had her daughter, Lee Ann. A few years later, she moved back to Los Banos, married her second husband, Jim, and had her son, Jamie. With her children, she moved to Madera, where she was a waitress at the Fruit Basket. She later married Sonny La Mattina, and they lived together in Madera for many years. When she retired, she moved to Chowchilla, where she would live for the rest of her life.
Carol, better known as Grammy, loved being a grandmother and great-grandmother. She followed Darbi, Carli, and Samanntha to all of their sports games and was their biggest fan. She loved dancing with her great-grandson, AJ, and was beyond excited to meet her new great-grandson, Tatum. In her free time, she loved to play bingo with her friends at the Chowchilla Terrace Apartments, gamble at the casino, play cards, and buy scratchers. Her light and laughter lit up every room and her family and friends will miss her dearly.
Carol was preceded in death by her parents Tom and Birdie Dollard, and her siblings, Lou, Tommy, Jack, Kat, Kenneth, and Wanda, and her husband, Sonny La Mattina.
Carol is survived by her daughter, Lee Ann, her husband Sam Eastton, and granddaughter Samanntha, her son Jamie, and his wife Elizabeth Duke, alongside her grandsons David and Aidan, her granddaughter Darbi Edlund and husband Matthew Edlund, and their son Tatum, her grandaughter Carli Duke, and her son Atlas, and Staci La Mattina, and sister-in-law Michelle La Mattina. She also leaves behind many beloved family members and friends.
In lieu of flowers, the family asks that you donate to funding cancer research. Later in life, Carol was diagnosed with cancer and fought fearlessly. Her memory will be honored by helping others fight against cancer.
