

Lori Anne Barinque-Lastrella was born in Fort Leonard Wood, Missouri on September 1st, 1965. She passed away at the age of 60 on March 24th, 2026 in Colorado Springs, Colorado after a 3-year long battle with cancer.
Lori was a dedicated stay-at-home mom for nearly 18-years and a devoted wife. Lori and her husband Paul eventually became pillars in the local Colorado Springs community for over a decade through their two successful restaurants, Sushi Ring II and JEI Sushi. She effectively became known as ‘Mama Lori’ for how she cared for each patron who frequented both restaurants. “Walk in as friends, leave as family” was a saying commonly used to describe Lori’s business practices. She had a passion for serving and caring for every single person around her. Lori will be remembered for her fiery spirit, contagious smile, and her deep love for her family and friends. Even after her cancer diagnosis, she was remarked for her positive attitude and unwavering sense of faith. Lori is preceded in death by her father, Leonardo Barinque, and her mother, Sally Marie Barinque. She is survived by her five siblings: Steve, Eddie, Mark, Chris and Christina; As well as her soulmate & husband, Paul Lastrella and her three children: Bryan, Jay, and Meghan.
A funeral mass will be held for her at Saint Joseph Catholic Church on Tuesday, April 14th at 11am immediately followed by a celebration of life/reception.
