Nicole Jean Binsfeld, born on March 25, 1984, in Fond du Lac, Wisconsin, received her angel wings on January 29, 2025, at the age of 40. Her life was a vibrant mosaic of love and cherished connections, leaving behind memories that will forever grace the hearts of those who knew her.
Nicole was a devoted mother to her two beloved daughters, Julianna C. Broughton and Lilianna D. Binsfeld. She was the treasured daughter of Mark and Christine (Plonsky) Binsfeld and a loving sister to Rebecca M. Binsfeld. She now joins in eternal rest her brother (her BFF) Gerald “Buddy” Binsfeld; niece Brionna M. Binsfeld; grandparents Darlene (Benzel) and Gerald Plonsky and Bernita Rice; and her uncle Mark Plonsky, along with extended family members and friends who preceded her on this journey.
Nicole’s passion for cooking brought people together in countless joyful moments around shared meals. Her ability to create warmth and connection through food was matched only by her whimsical love for unicorns—a reflection of her radiant personality. With a spirit full of color, magic, and light, she brightened the lives of everyone fortunate enough to know her.
A funeral service honoring Nicole’s life will be held at Crawford-Bowers Funeral Home in Copperas Cove, Texas, on February 15, 2025, at 1 p.m. Following the service, family and friends are invited to gather at VFW Post 3393 in Kempner, Texas, starting at 5 p.m., for a potluck celebration in Nicole’s memory. This gathering offers an opportunity to share stories and enjoy favorite dishes as a tribute to her generous spirit. Donations can be made directly to the family.
Though her time with us was far too brief, Nicole’s memory remains a beacon of joy and comfort for all who were touched by her warmth. May she rest peacefully in eternal serenity.
