

Susan was born on December 19, 1938, to George and Velma Elliott in Chanute, Kansas, owners of Drake’s Bakery. She is a 1956 graduate of North Kansas City High School where she was a drum majorette and homecoming queen candidate. She was known for her beauty inside and out, which is what attracted Paul to fall in love with her.
Susan married Paul L. Knick, from North Kansas City, Missouri, on May 12, 1957, and spent the first two years of marriage at Fort Campbell Kentucky as a military spouse.
Susan was a loving and proud mother to her four children and gave unselfishly. Children: Kari (Kenny) Thomas, Penny (Todd) Burnidge, Dr. Paul D. (Chris) Knick and LTC(R) Mark (Stacy) Knick; seven grandchildren (Brad Thomas, Jordyn (Chad) Clauser, Emily (Brett) Rookstool, Luke (Andrea) Burnidge, Paul E. (Mary Catherine) Knick, Danielle Knick and Abigail Knick; and six great grandchildren.
She held many jobs ranging from Drake’s Bakery Soda Fountain to co-owner of Knicks Mend-Rite, a family-owned business in North Kansas City, Missouri. Susan spent a lot of time volunteering in the community. She was a member and president of Boy Scout Troop 288 “Troop Mothers” where they raised funds for equipment and a bus, Den Mother of Pack 218, Member and Officer of PEO, volunteer at the Nearly New Thrift Store, NKC High School Junior Assembly Officer, assisted with Brownie and Girl Scouts, and coordinated children’s activities at Old Pike Country Club. She was an active member of First Baptist Church North Kansas City and member of the Women’s Missionary Union. She enjoyed playing Bridge with her friends, reading, sewing, painting ceramics, and doing crossword puzzles in her spare time.
Susan is survived by her husband of 68 years, Paul L. Knick, their four children, and brother, Jim Elliott. She will be interned in the Knick Family plot at White Chapel Cemetery in Gladstone, Missouri with a private family graveside service.
